How To Make Vegan Halloween Stuffed Bell Peppers Recipe

These Halloween-themed stuffed bell peppers are completely vegan and full of flavor!

  • 4 large bell peppers
  • 1 cup of cooked quinoa
  • 1 can of black beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1/2 cup of frozen corn
  • 1/2 cup of chopped onion
  • 1/2 cup of vegan cheese shreds
  • 1 tbsp of chili powder
  • 1 tsp of cumin
  • Salt and pepper to taste


  1. Preheat oven to 375°F.

  2. Cut the tops off of the bell peppers and remove the seeds and membranes.

  3. In a bowl, mix together quinoa, black beans, diced tomatoes, corn, onion, cheese shreds, chili powder, cumin, salt, and pepper.

  4. Stuff each bell pepper with the mixture and place in a baking dish.

  5. Bake for 45 minutes or until the bell peppers are tender.
