How To Make Vegan Halloween Stuffed Bell Peppers Recipe
These Halloween-themed stuffed bell peppers are completely vegan and full of flavor!

Ingredients
- 4 large bell peppers
- 1 cup of cooked quinoa
- 1 can of black beans, drained and rinsed
- 1 can of diced tomatoes
- 1/2 cup of frozen corn
- 1/2 cup of chopped onion
- 1/2 cup of vegan cheese shreds
- 1 tbsp of chili powder
- 1 tsp of cumin
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

Cut the tops off of the bell peppers and remove the seeds and membranes.

In a bowl, mix together quinoa, black beans, diced tomatoes, corn, onion, cheese shreds, chili powder, cumin, salt, and pepper.

Stuff each bell pepper with the mixture and place in a baking dish.

Bake for 45 minutes or until the bell peppers are tender.
