How To Make Vegan Halloween Jack-O’-Lantern Quesadillas

These spooky quesadillas are perfect for Halloween! They’re vegan and filled with delicious, melty cheese.

  • 4 large tortillas
  • 2 cups vegan cheddar cheese, shredded
  • 1/2 cup black olives, sliced
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • Cooking spray


  1. Preheat oven to 425°F.

  2. Cut each tortilla into a jack-o’-lantern shape using a sharp knife or cookie cutter.

  3. Spray a baking sheet with cooking spray and place the tortillas on it.

  4. Divide the cheese among the tortillas, covering half of each one.

  5. Add the olives, tomatoes, and red onion to the cheese side of the tortillas.

  6. Fold the other half of the tortillas over the filling and press down gently.

  7. Bake for 10-12 minutes, or until the cheese is melted and the tortillas are crispy.

  8. Serve hot and enjoy your spooky, vegan Halloween quesadillas!
