Ingredients

  • 1 small pumpkin, peeled and cubed
  • 1 can of coconut milk
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups of vegetable stock
  • 1 tsp of ground cinnamon
  • 1 tsp of ground ginger
  • Salt and pepper to taste
  • Optional: roasted pumpkin seeds and coconut milk drizzle for topping

Instructions

  1. In a pot, sauté onion and garlic until fragrant.

  2. Add pumpkin and vegetable stock and simmer for 20 minutes.

  3. Add coconut milk, cinnamon, ginger, salt, and pepper. Mix well and simmer for another 10 minutes.

  4. Let the soup cool for a bit and then puree in a blender or with an immersion blender until smooth.

  5. Serve hot with optional toppings.
