  • 1 can of pumpkin puree
  • 1/2 cup of coconut cream
  • 1/2 cup of brown sugar
  • 1/2 tsp of ground cinnamon
  • 1/2 tsp of ground ginger
  • 1/4 tsp of ground nutmeg
  • Pinch of salt
  • 1 store-bought vegan pie crust

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine pumpkin puree, coconut cream, brown sugar, cinnamon, ginger, nutmeg, and salt.

  3. Mix until well combined.

  4. Pour mixture into pie crust and smooth with a spatula.

  5. Bake for 1 hour or until filling is set and the crust is golden brown.

  6. Let cool before serving.
