How To Make Vegan Halloween Chili Recipe
A hearty, flavorful chili perfect for Halloween night, made with only plant-based ingredients.
In a large pot, heat the olive oil over medium-high heat.
Add onions and garlic and sauté for 2-3 minutes until softened.
Add bell peppers and cook for another 3-4 minutes until they begin to soften.
Add diced tomatoes with their juices, kidney beans, black beans, corn, and chili seasoning mix.
Stir everything together well then add water as needed to cover the ingredients.
Bring the chili to a boil, then lower the heat and let it simmer for 30-40 minutes until the vegetables are completely cooked through.
Taste and adjust seasoning with salt and pepper.
Serve hot with optional toppings if desired.
