How To Make Enoki Mushroom Noodles Recipe
A light, flavorful noodle dish with enoki mushrooms.

Ingredients
- 8 oz. soba noodles
 - 8 oz. enoki mushrooms
 - 2 tbsp sesame oil
 - 2 tbsp soy sauce
 - 1 tbsp rice vinegar
 - 1 tsp grated ginger
 - 1 clove garlic, minced
 - 1 green onion, thinly sliced
 - Salt and pepper to taste
 
Instructions
- 
Cook soba noodles according to package instructions, then drain and rinse with cold water.
 - 
Trim the root ends of the enoki mushrooms and separate them into small clusters.
 - 
In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, grated ginger, minced garlic, salt, and pepper.
 - 
In a large skillet, heat the sauce over medium-high heat. Add the enoki mushrooms and cook for 3-4 minutes, until softened and lightly browned.
 - 
Add the cooked soba noodles to the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes, until heated through.
 - 
Serve hot, garnished with sliced green onions.
