How To Make Enoki Mushroom and Soy Glazed Salmon Recipe

Flavorsome and healthy salmon dish glazed with soy sauce, served with sautéed enoki mushrooms.

Serves:

Ingredients

  • 4 salmon fillets (5-6 oz each)
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp grated ginger
  • 1 garlic clove, minced
  • 8 oz enoki mushrooms
  • 2 tbsp olive oil
  • Salt and pepper

Instructions

  1. Mix soy sauce, honey, ginger and garlic in a small bowl.

  2. Preheat oven to 400°F.

  3. Line a baking sheet with parchment paper and place salmon fillets on top.

  4. Brush the soy mixture on top of the salmon.

  5. Bake salmon for 12-15 minutes or until cooked through.

  6. Cut off the bottom of enoki mushrooms and separate them.

  7. Heat olive oil in a pan over medium heat.

  8. Add the mushrooms and sauté for 2-3 minutes.

  9. Add salt and pepper to taste.

  10. Serve salmon with sautéed enoki mushrooms.
