How To Make Mongolian Eggplant Recipe

A delicious vegetarian dish with eggplant and tasty seasonings from Mongolia.

Ingredients

  • 2 long Chinese eggplants, cut into bite-sized pieces
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 red chili, minced
  • 1 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • Salt and pepper to taste
  • Chopped scallions for garnish

Instructions

  1. Heat vegetable oil in a pan over medium heat.

  2. Add eggplants and stir-fry for 5-6 minutes, until softened.

  3. Add garlic, ginger, and chili, and cook for another 2 minutes.

  4. Add hoisin sauce, soy sauce, rice vinegar, salt, and pepper.

  5. Stir-fry for another 2-3 minutes, until everything is well combined.

  6. Top with chopped scallions and serve hot with rice.
