How To Make Enoki Mushroom and Rice Bowl Recipe

A healthy and flavorful rice bowl made with enoki mushrooms.

Serves:

Ingredients

  • 2 cups cooked brown rice
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 8 oz enoki mushrooms, trimmed and separated
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp water
  • 1 tbsp cornstarch
  • 2 green onions, chopped
  • sesame seeds for garnish

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add garlic and onion and stir-fry until fragrant.

  2. Add enoki mushrooms and stir-fry for 2 – 3 minutes.

  3. In a small bowl, mix soy sauce, rice vinegar, sesame oil, water and cornstarch.

  4. Pour the sauce into the skillet and stir until the sauce thickens.

  5. Divide the brown rice into 4 bowls and top with the enoki mushroom stir-fry.

  6. Garnish with chopped green onions and sesame seeds.
