Ingredients

  • 8 oz enoki mushrooms, roots removed and rinsed
  • 8 large eggs
  • 1/2 cup of milk
  • 1/4 cup shredded cheddar cheese
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat a large non-stick skillet over medium heat.

  2. Add olive oil and enoki mushrooms, and sauté for 3-4 minutes until mushrooms are tender.

  3. In a medium bowl, whisk together eggs, milk, cheese, salt, and black pepper.

  4. Pour the egg mixture over the sautéed mushrooms and cook for 5-6 minutes until the omelette is cooked through.

  5. Carefully slide the omelette onto a serving plate and serve hot.
