How To Make Quick Cajun Vegetables

Quick to whip up in 20 minutes, these buttery cajun vegetables is loaded with broccoli, corn, and mushrooms, all seasoned and pan-fried for a tasty side!

Ingredients

  • 10ozbroccoli,(1 package), frozen, thawed, chopped
  • 1cupfresh green beans,trimmed
  • 2tbspbutter
  • 1cupfresh mushrooms,sliced
  • 15ozbaby corn,(1 can), drained
  • 1tbspcajun seasoning
  • 1tbspolive oil

Instructions

  1. Bring a large pot of water to a boil. Add the broccoli and green beans.

  2. Simmer for about 5 minutes until the vegetables are just tender but still crunchy. Drain.

  3. Melt the butter in a large skillet over medium heat. Cook and stir the mushrooms for about 1 minute until they begin to soften.

  4. Add the baby corn and continue to cook and stir for about 1 minute more until heated through.

  5. Stir the broccoli and green beans into the mushroom mixture.

  6. Season with Cajun seasoning and toss with olive oil.

  7. Serve and enjoy!
