Ingredients

  • 1 lb Andouille sausage, sliced
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and pepper, to taste
  • Rice or quinoa, for serving

Instructions

  1. In a large skillet, heat the oil over medium-high heat. Add the Andouille sausage and cook until browned and crispy, about 5 minutes.

  2. Add the onion, bell peppers, zucchini, yellow squash, garlic, Cajun seasoning, and salt and pepper. Stir-fry until the vegetables are tender and the sausage is fully cooked, about 10-12 minutes.

  3. Serve the stir-fry over rice or quinoa.
