  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 4 ribs celery, chopped
  • 4 cloves garlic, minced
  • 2 cups seafood stock
  • 1 tbsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp hot sauce
  • 1 lb medium shrimp, peeled and deveined
  • Salt and freshly ground black pepper, to taste
  • 2 green onions, sliced diagonally
  • Cooked rice, for serving

Instructions

  1. In a large pan, melt the butter over medium heat. Add the flour and cook, stirring constantly, until it turns the color of light

  2. brown, about 6-8 minutes.

  3. Add the onion, green bell pepper, celery, and garlic. Cook until the vegetables are tender, about 8-10 minutes.

  4. Add the seafood stock, Cajun seasoning, paprika, thyme, oregano, and hot sauce. Stir well and bring to a boil, then reduce the

  5. heat and simmer for 10 minutes.

  6. Add the shrimp and cook until they are pink and cooked through, about 5-7 minutes.

  7. Season with salt and pepper, to taste. Serve over cooked white rice, topped with sliced green onions.
