- 2tbspbutter
- 1small white onion,diced
- 3garlic cloves,minced
- 4cupschicken broth
- 28oztomatoes,(1 can), diced
- 15ozwhite beans,(1 can), drained, rinsed
- 1cupheavy cream
- ¼cupparmesan cheese,grated
- 1tbspItalian seasoning
- 1tspsalt
- ¼tsppepper
- 2cupschicken,cooked, shredded
- 9oztortellini,refrigerated
- 2cupsspinach
Instructions

In a large pot over medium heat, heat up the butter. Add the onion and garlic and cook until tender.

Pour in the chicken broth, diced tomatoes, white beans, heavy cream, parmesan cheese, Italian seasoning, salt and pepper. Bring to a simmer.

Add the chicken, tortellini, and spinach. Let simmer for 10 minutes to thicken up and for the tortellini to cook.
