This spinach soup is enriched with tortellini and lots of juicy tomatoes and cream cheese. The creaminess of the dish is balanced out by lots of spices.

  • 20ozcheese tortellini
  • 10ozfresh spinach,(1 bag)
  • 29ozItalian style diced tomatoes,(2 cans)
  • 6cupschicken broth
  • 8ozcream cheese
  • 1tspcumin
  • 1tsporegano
  • 1tspgarlic salt
  • pepper,to taste


  1. Place all ingredients in the crock pot, minus the tortellini. Make sure cream cheese is cut up in 1 inch cubes before placing in crock pot.

  2. Cook on High for 2 to 3 hours stirring occasionally.

  3. Add tortellini and continue cooking on High for an additional hour. Serve warm.
