Cod, Scallops, and Spinach Recipe

How To Make Cod, Scallops, and Spinach

  • 6 good-sized sea scallops (shelled and cleaned)
  • 2 Large Cod Fillets
  • 6 oz. spinach (washed and stems trimmed)
  • Fresh nutmeg (for grating)
  • 3 tbsp butter
  • 2 tsp coconut oil
  • salt
  • pepper
  1. Preheat the oven to 450 degrees. Grease a baking sheet.
  2. Season cod with salt and pepper. Cook for 12 to 15 minutes.
  3. Now prepare the spinach and scallops, while cod is in the oven.
  4. In a skillet, melt a tbs of butter on medium/high heat.
  5. Add in spinach and cook for a minute. Strain spinach and keep liquid for later.
  6. In a different skillet, add coconut oil on medium/high heat.
  7. Add in scallops and let cook for a few minutes. Add another tbs of butter and flip over. Season with salt and pepper.
  8. Cook for a few more minutes and take off heat.
  9. In the vegetable skillet, add remaining butter on medium/high heat with vegetable juice and nutmeg.
  10. Blend together for a few minutes.
  11. Serve spinach with scallops and pour sauce over them. Add cod on top.

  • ½ lb scallops, shelled and cleaned
  • 1 lb cod fillets, Make 4 good slices
  • 2 cup spinach, washed and stems trimmed
  • ¼ tsp cayenne pepper powder
  • 2 tbsp unsalted butter, separate 1 tbsp for spinach
  • 3 tbsp olive oil
  • ½ tsp sea salt
  • ¼ tsp ground black pepper
  • 2 tbsp dry white wine
  • 1 tbsp lemon juice
  • 2 pcs lemon wedge
  • 3 pcs garlic cloves, chopped, separate 1 clove for spinach
  • 2 tbsp italian parsley, chopped


  1. Preheat the oven to 400 degree F.

  2. Season cod with salt, pepper, cayenne and lemon juice. Drizzle with olive oil then bake for 10 to 12 minutes.

  3. While baking the cod, heat up your skillet to medium high heat and season you scallops with salt and pepper.

  4. Add olive oil to your hot skillet and start cooking your scallops for 3 mins on each side.

  5. When you are done searing your scallops, add wine then stir the bottom of the pan.

  6. Add butter and garlic, then continue cooking for 2 mins. Spoon the melted butter over your scallops while doing this.

  7. Using the same skillet, sauté garlic, then add your spinach and butter. Cook for 2 to 3 mins. Season with salt and pepper.

  8. Your cod should be ready by this time, check if it is cooked through, then take it off the oven.

  9. To serve, plate your cod fillet over a bed of garlic spinach then top with seared scallops, garnished with chopped parsley and lemon wedge on the side. Enjoy!
