How To Make Sweet Potato Salad

This sweet potato salad is a colorful dish that also has corn, bell peppers, celery, and bacon and is served with a creamy and tangy dressing.

Preparation: 20 minutes
Cooking: 35 minutes
Refrigerate Time: 2 hours 1 minute
Total: 2 hours 56 minutes


  • 2lbssweet potatoes,peeled and cubed
  • 2tbspolive oil
  • ½tspgarlic powder
  • 2green onions,sliced
  • 2stalkscelery,chopped
  • 1cupcorn,frozen, defrosted
  • ½cupred bell pepper,chopped
  • 6bacon,slices, cooked and crumbled

For Dressing:

  • ½cupmayonnaise
  • ¼cupsour cream
  • 2tbspdijon mustard
  • 2tbspsweet relish
  • 2tbspcider vinegar
  • salt & pepper,to taste


  1. Preheat oven to 400 degrees F.

  2. Toss sweet potatoes with olive oil, garlic powder, and salt and pepper to taste. Roast 35 to 40 minutes or until fork tender. Cool completely.

  3. Combine dressing ingredients in a large bowl and mix well.

  4. Add remaining ingredients, toss to coat and refrigerate at least 2 hours before serving.
