Copycat Applebee’s Fiesta Chicken Salad Recipe

How To Make Copycat Applebee’s Fiesta Chicken Salad

  • 4 cups mixed lettuce (preferably romaine & iceberg, chopped)
  • ¼ cup red onion (chopped )
  • ¼ cup green pepper (chopped )
  • 2 pcs tomatoes (chopped into chunks)
  • ¼ cup canned corn kernels (drained)
  • ¼ cup canned black beans (drained)
  • 3 tbsp. cheddar cheese (shredded )
  • 1 tbsp. cilantro (chopped )
  • 1 pc grilled chicken breast (chopped)

DRESSING:

  • 4 tbsp. greek yogurt (plain )
  • 1 tbsp. pickled jalapeno (chopped )
  • 1 tbsp. rice vinegar
  • 1 tsp. cilantro (chopped )
  • ½ tsp. brown sugar
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  1. Whisk together all of your dressing ingredients and set aside.
  2. Put all of the salad ingredients in a large bowl and toss.
  3. Finish with a drizzle of the dressing.
