  • ¾cupcorn,cooked
  • 1large tomato,diced
  • 1large scallion,diced fine
  • 4tbspcilantro,chopped
  • 1tbspfresh squeezed lime juice
  • Salt,to taste


  1. In a large bowl, combine hot rice, heated corn, heated beans, tomato, scallion, cilantro, lime juice, and salt if needed.
