Ingredients

  • 5lbschuck roast
  • 2tbspcanola oil
  • 2tspkosher salt
  • 1tspblack pepper,coarse ground
  • 1tspdried thyme
  • 1lbcarrots,peeled, cut into 2-inch chunks
  • 2lbsyukon gold potatoes,peeled, cut into large chunks
  • 2garlic cloves,minced
  • 2cupsbeef broth

Instructions

  1. Preheat the oven to 325 degrees F.

  2. Season the chuck roast with the salt, pepper and thyme.

  3. Add the canola oil to a pan, then allow to heat.

  4. When the oil ripples and is hot, add in the roast, then brown it deeply for 4 to 5 minutes on each side.

  5. Add the carrots, potatoes, garlic and beef broth.

  6. Cook for 3 to 3½ hours.

  7. Serve warm, and enjoy!
