How To Make Next Level Thai Green Curry

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp Thai green curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 tbsp fish sauce
  • 1 tbsp palm sugar (or brown sugar)
  • 1 cup bamboo shoots, sliced
  • 1 red bell pepper, sliced
  • 1 cup Thai basil leaves
  • 4 kaffir lime leaves
  • 1 tbsp vegetable oil


  1. Heat the vegetable oil in a large pan over medium heat. Add the green curry paste and stir fry for 1 minute until fragrant.

  2. Add the chicken pieces and cook until browned on all sides.

  3. Pour in the coconut milk and chicken broth. Stir to combine.

  4. Add the fish sauce and palm sugar. Stir well and bring to a simmer.

  5. Add the bamboo shoots and bell pepper. Cook for 5 minutes.

  6. Tear the kaffir lime leaves into small pieces and add them to the curry.

  7. Stir in the Thai basil leaves and cook for another 2 minutes.

  8. Serve the Thai green curry over steamed rice or noodles.
