How To Make Easy Thai Green Chicken Curry

Ingredients
- 500g boneless chicken, sliced
- 2 tbsp green curry paste
- 1 can (400ml) coconut milk
- 1 cup chicken broth
- 1 cup mixed vegetables (bell peppers, broccoli, carrots)
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 cup basil leaves
- 2 tbsp vegetable oil
Instructions

Heat the vegetable oil in a large pot or skillet over medium heat.

Add the green curry paste and cook for 1-2 minutes until fragrant.

Add the chicken and cook until browned on all sides.

Pour in the coconut milk and chicken broth. Stir well to combine.

Add the mixed vegetables, fish sauce, and brown sugar. Stir to combine.

Simmer for 15-20 minutes until the chicken is cooked through and the vegetables are tender.

Stir in the basil leaves and cook for an additional 2 minutes.
