Ingredients
- 4 large carrots, peeled and chopped
- 2 star anise
- 2 tablespoons butter
- 1/2 cup vegetable broth
- salt and pepper to taste
Instructions

In a large pot, add the carrots, star anise, butter, and vegetable broth. Bring to a boil over medium heat.

Reduce heat to low and simmer for 15-20 minutes, or until the carrots are tender.

Remove the star anise from the pot and discard.

Using a blender or immersion blender, purée the carrots until smooth and creamy.

Season with salt and pepper to taste.

Serve hot as a side dish with your favorite main course.
