How To Make Carrot & Star Anise Purée

Ingredients

  • 4 large carrots, peeled and chopped
  • 2 star anise
  • 2 tablespoons butter
  • 1/2 cup vegetable broth
  • salt and pepper to taste

Instructions

  1. In a large pot, add the carrots, star anise, butter, and vegetable broth. Bring to a boil over medium heat.

  2. Reduce heat to low and simmer for 15-20 minutes, or until the carrots are tender.

  3. Remove the star anise from the pot and discard.

  4. Using a blender or immersion blender, purée the carrots until smooth and creamy.

  5. Season with salt and pepper to taste.

  6. Serve hot as a side dish with your favorite main course.
