Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tbsp green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup vegetable broth
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup sliced mushrooms
  • 1 cup snap peas
  • 1 tsp soy sauce
  • 1 tbsp lime juice
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened, about 2 minutes.

  2. Add the green curry paste and cook for 1 minute, stirring constantly.

  3. Pour in the coconut milk and vegetable broth. Bring to a simmer.

  4. Add the broccoli, bell pepper, zucchini, mushrooms, and snap peas. Cook for 10-15 minutes, or until the vegetables are tender.

  5. Stir in the soy sauce and lime juice. Taste and adjust seasoning as needed.

  6. Serve the green curry over cooked rice, garnished with fresh cilantro.
