How To Make Vegetarian Thai Green Curry

Ingredients
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 tbsp green curry paste
- 1 can (13.5 oz) coconut milk
- 1 cup vegetable broth
- 1 cup broccoli florets
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup sliced mushrooms
- 1 cup snap peas
- 1 tsp soy sauce
- 1 tbsp lime juice
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened, about 2 minutes.

Add the green curry paste and cook for 1 minute, stirring constantly.

Pour in the coconut milk and vegetable broth. Bring to a simmer.

Add the broccoli, bell pepper, zucchini, mushrooms, and snap peas. Cook for 10-15 minutes, or until the vegetables are tender.

Stir in the soy sauce and lime juice. Taste and adjust seasoning as needed.

Serve the green curry over cooked rice, garnished with fresh cilantro.
