Ingredients

  • 1 tbsp coconut oil
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp green curry paste
  • 1 can full-fat coconut milk
  • 1 cup vegetable broth
  • 2 tbsp soy sauce
  • 2 cups mixed vegetables (broccoli, peppers, green beans)
  • 1 cup diced tofu or protein of choice
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Fresh cilantro, finely chopped

Instructions

  1. Heat coconut oil in a large saucepan over medium heat.

  2. Add onion, garlic, and ginger and sauté until soft and fragrant.

  3. Add green curry paste and stir until fragrant.

  4. Pour in coconut milk and vegetable broth, whisking to combine.

  5. Add soy sauce and mixed vegetables, bringing mixture to a boil.

  6. Reduce heat and simmer for 10-15 minutes, until vegetables are cooked through.

  7. Add diced tofu or protein of choice and cook for an additional 5-10 minutes.

  8. Stir in lime juice, salt, and pepper.

  9. Serve over rice or noodles and garnish with fresh cilantro.
