How To Make Thai Green Curry Paste
A flavorful and aromatic paste made from fresh ingredients, perfect for adding an authentic Thai taste to your dishes.

Ingredients
- 4 green chilies, deseeded and chopped
- 4 cloves of garlic
- 1 shallot, chopped
- 1 lemongrass stalk, sliced
- 1 thumb-sized piece of ginger, peeled and chopped
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp white peppercorns
- 1 tsp shrimp paste
- 1 tsp salt
- 1 tbsp vegetable oil
Instructions

Heat a small dry pan over medium heat. Toast the coriander seeds, cumin seeds, and white peppercorns for a couple of minutes until fragrant. Remove from heat and let it cool.

In a blender or food processor, add the toasted spices, green chilies, garlic, shallot, lemongrass, ginger, shrimp paste, and salt. Blend until smooth.

Heat vegetable oil in a skillet over medium-high heat. Add the paste and cook for about 5 minutes, stirring constantly, until fragrant and slightly darkened in color.

Remove from heat and let it cool completely before using. Store in an airtight container in the refrigerator for up to 2 weeks.
