Ingredients

  • 4 green chilies, deseeded and chopped
  • 4 cloves of garlic
  • 1 shallot, chopped
  • 1 lemongrass stalk, sliced
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp white peppercorns
  • 1 tsp shrimp paste
  • 1 tsp salt
  • 1 tbsp vegetable oil

Instructions

  1. Heat a small dry pan over medium heat. Toast the coriander seeds, cumin seeds, and white peppercorns for a couple of minutes until fragrant. Remove from heat and let it cool.

  2. In a blender or food processor, add the toasted spices, green chilies, garlic, shallot, lemongrass, ginger, shrimp paste, and salt. Blend until smooth.

  3. Heat vegetable oil in a skillet over medium-high heat. Add the paste and cook for about 5 minutes, stirring constantly, until fragrant and slightly darkened in color.

  4. Remove from heat and let it cool completely before using. Store in an airtight container in the refrigerator for up to 2 weeks.
