How To Make Vegan Thai Green Curry

Ingredients
- 1 tbsp coconut oil
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 tbsp grated ginger
- 2 tbsp Thai green curry paste
- 1 can (400ml) coconut milk
- 1 cup vegetable broth
- 1 cup diced tofu
- 2 cups mixed vegetables (such as bell peppers, broccoli, carrots)
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat coconut oil in a large pot over medium heat. Add onions, garlic, and ginger. Sauté until onions are translucent.

Add green curry paste and stir for a minute until fragrant.

Pour in coconut milk and vegetable broth. Stir well to combine.

Add tofu and mixed vegetables. Simmer for about 15 minutes or until vegetables are tender.

Stir in soy sauce, lime juice, brown sugar, and salt. Adjust the seasonings according to taste.

Serve the curry hot, garnished with fresh cilantro. Enjoy with jasmine rice or noodles.
