How To Make Prawns in Longjing Tea

Ingredients

  • 1 pound of prawns, peeled and deveined
  • 2 cups of Longjing tea leaves
  • 2 cups of water
  • 3 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of cornstarch
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a pot, bring water to a boil and add the Longjing tea leaves. Steep for 5 minutes.

  2. Strain the tea and set aside.

  3. In a separate bowl, mix the cornstarch with a little water to make a slurry.

  4. Heat the vegetable oil in a pan over medium heat. Add the minced garlic and sauté until fragrant.

  5. Add the prawns to the pan and cook until they turn pink, stirring constantly.

  6. Pour in the Longjing tea and soy sauce. Season with salt and pepper.

  7. Stir in the cornstarch slurry and cook until the sauce thickens. Remove from heat.

  8. Garnish with chopped green onions and serve hot.
