Pineapple chunks add island flavor to this chicken dish. You get a hint of tropical infusion with a bit of Asian savor. Serve it fresh from the oven in this aloha chicken recipe.

Ingredients

  • 8 oz. pineapple chunks, reserve juice
  • 3 cups chicken, cooked and diced
  • 2 stalks celery, diagonally sliced
  • 1 green pepper, cut in 1-inch pieces
  • ¼ cup soy sauce
  • 2 ⅔ cups chicken broth, can use bouillon, include pineapple juice as part of this liquid
  • 1 tsp. ginger
  • ½ tsp. garlic powder
  • ¼ cup cornstarch

Instructions

  1. Drain pineapple, reserving juice for sauce.
  2. Combine pineapple, celery and green pepper.
  3. Combine juice with broth to make it equal 2 ⅔ cup liquid.

  4. Add soy sauce, cornstarch, ginger and garlic powder; stir well to dissolve cornstarch.
  5. Place chicken, peppers and pineapple chunks in casserole.
  6. Pour sauce over and bake at 350 degrees F for 40 minutes or until sauce thickens, stirring occasionally
