Ingredients
- 1 bunch of kale, stems removed and leaves chopped
- 1 bunch of Swiss chard, stems removed and leaves chopped
- 1 leek, thinly sliced
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes
- 1 sheet of puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C).

In a large skillet, heat olive oil over medium heat. Add leek and garlic, sauté until softened.

Add kale and Swiss chard to the skillet, season with salt, black pepper, thyme, and red pepper flakes. Cook until greens are wilted.

Roll out the puff pastry on a floured surface to fit your pie dish. Transfer the pastry to the dish and trim any excess.

Spoon the cooked greens mixture into the pastry-lined pie dish.

Brush the edges of the pastry with egg wash. Place another sheet of puff pastry on top and crimp the edges to seal.

Brush the entire surface of the pie with egg wash.

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and crispy.

Remove from the oven and let cool for a few minutes before serving.
