Ingredients

  • 4 halloumi slices
  • 4 pineapple slices
  • 4 burger buns
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrot
  • 1/4 cup chopped cilantro
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tsp honey

Instructions

  1. Preheat a grill or grill pan over medium heat.

  2. In a small bowl, mix together the olive oil, paprika, cumin, garlic powder, salt, and pepper. Brush this mixture onto the halloumi slices and pineapple slices.

  3. Grill the halloumi for 2-3 minutes on each side, or until grill marks appear. Grill the pineapple for 1-2 minutes on each side, or until it caramelizes slightly.

  4. In a separate bowl, combine the shredded cabbage, shredded carrot, chopped cilantro, mayonnaise, lime juice, and honey. Mix well to combine.

  5. Toast the burger buns on the grill for a minute or two.

  6. Assemble the burgers: place a halloumi slice on the bottom half of each bun, followed by a pineapple slice, a generous amount of the zingy slaw, and the top half of the bun.

  7. Serve the burgers immediately and enjoy!
