How To Make Carrot Patch Cake

Ingredients
- 1 cup grated carrots
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/4 cup crushed pineapple, drained
- 1/4 cup chopped walnuts (optional)
- Cream cheese frosting for topping
Instructions

Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan.

In a mixing bowl, combine the grated carrots, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the sugar, vegetable oil, applesauce, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Fold in the crushed pineapple and chopped walnuts, if using.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
