How To Make Roast New Potato Salad with Caper & Tarragon Dressing

Ingredients
- 1.5 pounds new potatoes, halved
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons capers, drained and rinsed
- 1 tablespoon fresh tarragon, chopped
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 2 green onions, sliced
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the halved new potatoes with olive oil, salt, and pepper.

Place the potatoes on a baking sheet and roast for 25-30 minutes or until golden and crispy.

In another bowl, mix together capers, tarragon, mayonnaise, Dijon mustard, lemon juice, garlic, and green onions to make the dressing.

Once the potatoes are done, let them cool slightly before tossing them with the dressing.

Serve the roast potato salad warm or chilled.
