How To Make Harissa Roasted Squash & Feta Pie

Ingredients
- 1 butternut squash, peeled, seeded, and cubed
- 2 tbsp harissa paste
- 2 tbsp olive oil
- 1 red onion, thinly sliced
- 3 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper, to taste
- 1 sheet of store-bought puff pastry
- 200g feta cheese
- Fresh cilantro, for garnish
- Lemon wedges, for serving
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, combine the cubed butternut squash, harissa paste, olive oil, red onion, minced garlic, ground cumin, ground coriander, salt, and pepper. Toss until well coated.

Spread the mixture onto a baking sheet and roast in the preheated oven for 25-30 minutes, or until the squash is tender and slightly caramelized.

While the squash is roasting, roll out the puff pastry sheet on a floured surface to fit your pie dish.

Transfer the roasted squash mixture into the pie dish and crumble the feta cheese on top.

Place the puff pastry sheet over the pie dish, tucking in the edges.

Brush the puff pastry with a beaten egg for a golden crust.

Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
