How To Make Puff Pastry Chicken Pot Pie

Ingredients
- 2 sheets of frozen puff pastry, thawed
- 2 cups of cooked chicken, diced
- 1 cup of frozen mixed vegetables
- 1/2 cup of diced onion
- 1/2 cup of diced carrots
- 1/2 cup of diced celery
- 2 cloves of garlic, minced
- 3 tablespoons of all-purpose flour
- 2 cups of chicken broth
- 1/2 cup of milk
- 1 teaspoon of dried thyme
- Salt and pepper to taste
Instructions

Preheat your oven to 400°F (200°C).

In a large skillet, heat some oil over medium heat. Add the onions, carrots, celery, and garlic. Sauté until vegetables are tender.

Stir in the flour and cook for another minute.

Gradually whisk in the chicken broth and milk. Bring to a simmer and cook until thickened.

Stir in the chicken, frozen vegetables, thyme, salt, and pepper. Cook for another 5 minutes.

Divide the chicken mixture among four oven-safe bowls or ramekins.

Cut the puff pastry sheets into four even squares. Place one square over each bowl, pressing the edges to seal.

Brush the puff pastry with beaten egg for a golden finish.
