Ingredients

  • 1 sheet of puff pastry
  • 8 quail’s eggs
  • 1 zucchini, thinly sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, thinly sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Roll out the puff pastry sheet and place it in a tart pan.

  3. In a bowl, lightly beat the quail’s eggs and season with salt and pepper.

  4. Heat the olive oil in a pan over medium heat. Add the zucchini, bell pepper, and red onion. Sauté for 5 minutes until slightly cooked.

  5. Pour the beaten quail’s eggs over the puff pastry.

  6. Arrange the sautéed vegetables on top of the quail’s eggs.

  7. Bake in the preheated oven for 25-30 minutes or until the pastry is golden and the eggs are set.

  8. Remove from the oven and let it cool slightly.

  9. Garnish with fresh basil leaves before serving.
