  • 4 pre-made tart shells
  • 3 limes, zested and juiced
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, at room temperature
  • 1 cup mixed summer berries (such as strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a medium bowl, whisk together the eggs, lime zest, lime juice, sugar, and butter until well combined.

  3. Pour the lime mixture into the tart shells and smooth the tops with a spoon.

  4. Bake in the preheated oven for 10 minutes or until the edges are set and the centers are slightly jiggly.

  5. Remove from the oven and let cool completely before refrigerating for at least 2 hours to set.

  6. Just before serving, top each tart with a handful of mixed summer berries.
