Serves:
Ingredients
- 1 sheet of ready-made puff pastry
- 2 ripe bananas
- 1/2 cup of sugar
- 2 tablespoons of cornstarch
- 2 cups of milk
- 1 teaspoon of vanilla extract
- Whipped cream, for serving
- Ground cinnamon, for garnish
Instructions
-
Preheat the oven to 375°F (190°C).
-
Roll out the puff pastry and use a round cookie cutter to cut out 4 circles, slightly larger than the tart pans.
-
Fit the pastry circles into 4 individual tart pans and trim off any excess.
-
In a saucepan, mash the bananas until smooth.
-
In a separate bowl, whisk together the sugar and cornstarch. Add this mixture to the mashed bananas and stir well.
-
Gradually whisk in the milk and vanilla extract until well combined.
-
Place the saucepan over medium heat and cook the banana mixture, stirring constantly, until it thickens into a custard consistency.
-
Remove the saucepan from the heat and let the custard cool slightly.
-
Pour the custard into the tart pans, filling them almost to the top.
-
Bake the tarts in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the custard is set.
-
Remove from the oven and let the tarts cool completely.
-
Serve the banana custard tarts with a dollop of whipped cream and a sprinkle of ground cinnamon.
