Ingredients

  • 1 sheet of puff pastry, thawed
  • 1 red onion, thinly sliced
  • 1 cup of crumbled feta cheese
  • 1/2 cup of pitted Kalamata olives, halved
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry on a floured surface and transfer it to a baking sheet.

  3. In a skillet, heat the olive oil over medium heat. Add the sliced red onions and cook until softened, about 5 minutes. Season with salt, pepper, and dried thyme.

  4. Spread the cooked red onions evenly over the puff pastry.

  5. Top with crumbled feta cheese and halved Kalamata olives.

  6. Bake in the preheated oven for 25-30 minutes, or until the puff pastry is golden and the cheese is melted and lightly browned.

  7. Remove from the oven and let cool for a few minutes before slicing and serving.
