Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 2 lemons, zested and juiced
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 cup mixed summer berries (such as strawberries, blueberries, raspberries)
- Fresh mint leaves, for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a food processor, combine flour, butter, granulated sugar, and salt. Pulse until mixture resembles coarse crumbs.

Press the mixture into the bottom and up the sides of a 9-inch tart pan.

Bake the crust in the preheated oven for 12-15 minutes, until golden brown. Let it cool completely.

In a mixing bowl, whisk together lemon zest, lemon juice, eggs, and heavy cream until well combined.

Pour the lemon mixture into the cooled tart shell.

Bake for 15-20 minutes, until the tart is set but still slightly jiggly in the center.

Remove from the oven and let it cool for 10 minutes, then refrigerate for at least 2 hours to chill and set.

In a small bowl, mix together powdered sugar and a squeeze of lemon juice to make a glaze. Drizzle the glaze over the chilled tart.

Top with mixed summer berries and garnish with fresh mint leaves.
