Serves:
Ingredients
- 1 pre-made pie crust
- 1 cup grated cheddar cheese
- 1 cup sliced asparagus
- 1 cup sliced zucchini
- 1 cup sliced yellow squash
- 1/2 cup sliced red onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
-
Preheat the oven to 400°F (200°C).
-
Roll out the pie crust on a baking sheet lined with parchment paper.
-
In a large bowl, toss together the sliced asparagus, zucchini, yellow squash, red onion, garlic, olive oil, salt, and pepper.
-
Spread the grated cheese evenly on the rolled-out pie crust, leaving a 2-inch border around the edges.
-
Arrange the marinated vegetables on top of the cheese, again leaving a border.
-
Fold the edges of the pie crust over the filling, creating a rustic galette shape.
-
Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the vegetables are tender.
-
Remove from the oven and let cool for a few minutes before garnishing with fresh basil leaves.
-
Slice and serve warm.
