  • 1 pre-made pie crust
  • 1 cup grated cheddar cheese
  • 1 cup sliced asparagus
  • 1 cup sliced zucchini
  • 1 cup sliced yellow squash
  • 1/2 cup sliced red onion
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the pie crust on a baking sheet lined with parchment paper.

  3. In a large bowl, toss together the sliced asparagus, zucchini, yellow squash, red onion, garlic, olive oil, salt, and pepper.

  4. Spread the grated cheese evenly on the rolled-out pie crust, leaving a 2-inch border around the edges.

  5. Arrange the marinated vegetables on top of the cheese, again leaving a border.

  6. Fold the edges of the pie crust over the filling, creating a rustic galette shape.

  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the vegetables are tender.

  8. Remove from the oven and let cool for a few minutes before garnishing with fresh basil leaves.

  9. Slice and serve warm.
