Ingredients

  • 1 sheet of puff pastry
  • 1 cup of almond meal
  • 1/4 cup of sugar
  • 1/4 cup of butter, melted
  • 2 eggs
  • 1/2 tsp of almond extract
  • 1/2 tsp of vanilla extract
  • 4 ripe apricots, sliced

Instructions

  1. Preheat oven to 375°F.

  2. Roll out puff pastry and transfer to a tart pan.

  3. In a bowl, mix almond meal, sugar, melted butter, eggs, almond extract, and vanilla extract until well combined.

  4. Spread the almond mixture evenly onto the puff pastry.

  5. Arrange the sliced apricots on top of the almond mixture.

  6. Bake in the preheated oven for 35-40 minutes, or until the pastry is golden brown and the filling is set.

  7. Let the tart cool before serving.
