A quick and easy recipe for chicken pot pie that could certainly satisfy even the pickiest eaters! Easily made in under an hour, this simple pot pit has the creaminess from a blend of chicken and celery soup for that depth of flavor, then mixed in with chicken chunks, mixed vegetables, and water chestnuts for that extra boost.

Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup cream of celery soup
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • 1 cup mixed vegetables
  • 1 cup water chestnuts, sliced

Topping:

  • 1 cup self-rising flour
  • 1 cup milk
  • 1 stick butter, melted
  • 2 tsp. baking powder

Instructions

  1. Boil chicken. Mix all ingredients together in casserole.
  2. Mix topping ingredients and spread over top of chicken mixture.
  3. Bake at 400 degrees F for 45 minutes or until golden brown.
