How To Make Buttermilk Coconut Pie

A sweet and flaky pastry that’s delicious from the filling to the crust.

  • 3 cup sugar
  • 6 eggs
  • 1 stick butter (melted)
  • 1 cup buttermilk
  • 1 pkg coconut flakes (large package)
  • 2 tsp vanilla
  • 2 pie shells (unbaked )
  1. In a mixing bowl, lightly beat eggs.
  2. Gradually add sugar, buttermilk, melted butter, vanilla extract, and coconut flakes. Combine ingredients.
  3. Place pie shells on baking pans for pies before pouring in your mixture. Sprinkle a bit of coconut at the top of each pie.
  4. Bake at 300° for about an hour.
  5. Serve while hot.

Ingredients

  • 3 cup granulated sugar
  • 6 eggs
  • 4 oz unsalted butter, melted
  • 1 cup buttermilk
  • 1 large pkg coconut flakes or desiccated coconut, roughly 14 oz
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 20 oz prepared pie dough
  • All purpose flour for dusting, roughly ¼ cup
  • Cooking spray

To serve:

  • Roasted coconut flakes or desiccated coconut

Instructions

  1. Preheat your oven at 300 degrees Farenheit
  2. Dust your working area with flour. Roll out your pie dough evenly until you achieve about ½-inch thickness
  3. Place your greased pie tin on top of the pie dough to shape your required amount. Ensure to allot an additional ½-inch extra dough from your pie tin
  4. Cut the dough into the required shape & store any excess dough for future use
  5. place pie dough on it. Set aside any excess dough
  6. Grease your pie tin & place the shaped pie dough onto the pie tin. Gently press down to have the pie dough stick to the pie tin
  7. Crimp the edges to form a pattern, either using your fingers or a fork
  8. Trim any excess pie dough. Set aside
  9. In a mixing bowl, lightly beat eggs.
  10. Gradually add sugar, salt, buttermilk, melted butter, vanilla extract, and coconut flakes or desiccated coconut. Combine ingredients
  11. Pour custard mixture into the prepared pie tin & transfer to a preheated oven
  12. Bake at 300° for about an hour, or until a cake tester comes out clean
  13. Transfer the cooked pie onto cooling racks & allow to cool down briefly before slicing.
  14. Serve while hot, topped with roasted coconut flakes or desiccated coconut
