Mushrooms and cheese have been delicious together since the beginning of time. This meatless casserole with bella mushrooms is a definite must try.

How To Make Cheesy Mushroom Bake

Ingredients

  • 3 tbsp. butter
  • 2 tbsp. flour
  • ¾ lbs baby bella mushrooms
  • ¼ cup onion chopped
  • 3 cloves garlic chopped
  • ½ tsp. cayenne pepper
  • heavy cream
  • ½ cup chicken stock
  • 2 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 2 cups rice cooked
  • salt
  • pepper

Instructions

  • Preheat the oven to 425F and grease the casserole dish.
  • In a pot, melt 3 tablespoons butter, add flour and mix until golden.
  • Add the mushrooms, onion, garlic, cayenne, heavy cream and chicken stock to the pot.
  • Add 1 cup of cheese and mix in until melted.
  • Season with salt and pepper to taste.
  • Pour in a thin layer to the bottom of the baking dish, pour in the rice and then top with the remaining mushrooms and sauce.
  • Top with the remaining cheese and bake for 20 minutes, or until golden brown and melted.
