  • 1 cup canned pumpkin puree
  • ½ cup almond flour
  • ½ cup coconut flour
  • ½ cup erythritol
  • 2 tsp baking powder
  • 1 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • 2 eggs
  • ½ cup unsweetened almond milk
  • ¼ cup melted coconut oil

Instructions

  1. Preheat oven to 350°F.

  2. In a large mixing bowl, combine pumpkin puree, almond flour, coconut flour, erythritol, baking powder, pumpkin pie spice, and cinnamon.

  3. Add eggs, almond milk, and melted coconut oil, and mix until well combined.

  4. Grease a 9-inch cake pan with non-stick cooking spray.

  5. Pour batter into the cake pan and smooth the top with a spatula.

  6. Bake for 30-35 minutes, or until a toothpick comes out clean when inserted into the center of the cake.
