Ingredients

For Coconut Pie:

  • 1cupwhole milk
  • 1cupheavy cream
  • ½cupflour
  • ½cupsugar
  • 6large eggs
  • 1tbspvanilla extract
  • 2cupsshredded coconut,sweetened

For Rum Sauce:

  • 1cupbrown sugar,packed
  • 1cupunsalted butter
  • ½cupdark rum

Instructions

  1. Preheat oven to 350 degrees F.

  2. Whisk the milk, heavy cream, sugar, flour, eggs, and vanilla in a large mixing bowl until smooth.

  3. Add coconut and whisk together until the coconut is fully coated with the liquid.

  4. Pour into a 9-inch pie plate and bake for 40 to 45 minutes.

  5. Add the butter, brown sugar, and rum to a medium saucepan

  6. Whisk together until the brown sugar has completely dissolved, then boil for 1 minute, timing to be sure.

  7. Spoon over pie slices.
