Ingredients
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tsp vanilla
- 3 cups carrots , or sweet potatoes (grated)
- 1 ½ cups oil
- 2 tsp salt
- 4 eggs
- 2 tsp soda
- 1 ½ tsp cinnamon
Instructions
- Sift flour, soda, salt and cinnamon.
- Add sugar and oil.
- Beat eggs and add to mixture.
- Add carrots or sweet potatoes.

Bake at 350 degrees F for 40 minutes.
