Ingredients

  • 12 large prawns, cooked and peeled
  • 8 rice paper wrappers
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 cup bean sprouts
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup peanuts, crushed
  • dipping sauce:
  • 3 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 garlic clove, minced
  • 1 red chili, sliced

Instructions

  1. Fill a large bowl with warm water. Dip one rice paper wrapper at a time into the water for a few seconds until pliable.

  2. Place the softened wrapper on a clean surface. Arrange 3 prawns in the center of the wrapper, leaving space on each side.

  3. Top the prawns with carrot, cucumber, bean sprouts, mint, cilantro, and crushed peanuts.

  4. Fold the sides of the wrapper over the filling, then tightly roll from the bottom to the top, like a burrito. Repeat with the remaining ingredients.

  5. In a small bowl, whisk together the fish sauce, lime juice, sugar, garlic, and chili until the sugar is dissolved.

  6. Serve the summer rolls with the dipping sauce on the side.
