How To Make Vietnamese Prawn Salad

Ingredients
- 500g prawns, peeled and deveined
- 1 cucumber, thinly sliced
- 1 carrot, thinly julienned
- 1 red bell pepper, thinly sliced
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
- Dressing:
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 garlic clove, minced
- 1 red chili, thinly sliced
Instructions

In a large pot of salted boiling water, cook the prawns for 3-4 minutes until they turn pink. Drain and set aside.

In a large bowl, combine the cucumber, carrot, bell pepper, mint leaves, and cilantro leaves.

In a small bowl, whisk together the fish sauce, lime juice, sugar, garlic, and chili until well combined.

Add the cooked prawns to the bowl of vegetables. Drizzle the dressing over the top and toss to combine.

Sprinkle with chopped peanuts before serving.
